It has long been known that the best chamomile tea comes from brewing the whole flowers. The medicinal benefits of chamomile include calming nerves and settling the stomach, but its active compounds called flavonoids (bisabolol, chamazulene and cyclic ethers) also have potent significant anti-inflammatory action.
Chamomile has a reputation for soothing the digestion. This is through its action as a muscle relaxant - it lessens tension in the gastro-intestinal tract. So, Chamomile tea is a good one to use after a meal. It is safe for children - certainly as young as 2 years (give an amount relative to body weight as compared to an adult).
To use: Place one teaspoon of tea per person into a warmed pot or mug infuser and add hot water. Allow to steep for 5 minutes, or longer if a strong infusion is required, then strain into mugs. A little honey or other natural sweeteners can be added if desired.
Chamomile is also available as a tincture.
